This is a recipe from my childhood. My parents made it for friends and neighbors. They always begged for more.

 1 cup dark brown sugar
 2 cups granulated sugar
 1 tsp. ginger
 1 cup canned crushed pineapple, drained
 1/2 cup cream
 2 T butter
 1 cup chopped pecans
 2 tsp vanilla

Cook ginger, sugars, pineapple, and cream over low heat until the sugar dissolves.

Boil to soft-ball stage (236-238).

Remove from heat and cool to lukewarm.

Add butter, nuts, and vanilla and beat by hand until creamy.

Pour into buttered 8x8x2 pan and mark into squares before cold.
