Grilled Pineapple and Mango Salad by Slade Grove

 1 pineapple (peeled, quartered, cored)
 2 Mangos (peeled, quartered, cored)
 2 tbsp EVOO (extra virgin olive oil) + extra for grill pan
 1 small bunch mint (julienned)
 Coarse sea salt to taste

Heat a grill pan to medium high and drizzle with some high quality EVOO, place quartered pineapple and mangos into pan and grill for a few minutes on each side until you have some good grill marks on each side.

Place pineapple and mangos onto a cutting board and rough cut into large chunks and place in a bowl. Add a little of the evoo, sprinkle with the coarse sea salt and toss to combine.

Plate the salad and sprinkle a little of the julienned mint and serve. Can be served warm or cold. Some variations: Serve cold as a refreshing summer salad, or serve warm with a nice dollop of vanilla bean ice cream.
